Why does your sous vide steak still taste worse than the steakhouse?

Short answer: Sous vide delivers perfect internal temperature. Steakhouse steak is also dry-aged (flavour), finished on a 500°C surface (crust), and properly rested (juice). You fixed #1. The sear is where most home cooks lose it.
The water bath brings the steak to exact temperature edge-to-edge — that's the genuine advantage, and it's real. But restaurants also dry-age beef for 21–45 days (moisture loss concentrates flavour), finish on flat tops or broilers that reach temperatures home equipment rarely matches, and rest cuts properly. Sous vide removes the guesswork from the first variable. The sear is where most home cooks lose the result.
The sear — why wet meat doesn't brown
Short answer: Water must evaporate before the Maillard reaction can start. Searing wet meat from a sous vide bag steams instead of browns. Dry the steak completely, heat the pan until it smokes, then 45–60 seconds per side maximum.
The Maillard reaction — the browning that creates crust and flavour — requires surface temperatures above 140°C (284°F). Water evaporates at 100°C. If the surface is wet, all energy goes to evaporation first. By the time the surface is dry enough to brown, you've already overcooked the outer layer. The fix: pat the steak completely dry after the water bath. For maximum results, dry-brine uncovered in the fridge for 1 hour before searing. Cast iron or carbon steel retains heat better than stainless when the cold steak hits the pan — critical for maintaining sear temperature.
The one thing most sous vide guides miss: a container and rack. Most people use a random pot. A proper polycarbonate container holds temperature more consistently and a rack keeps the bag submerged and away from the heating element — both affect the result.
The four-step process
Each step has one failure mode. Here's what to do at each stage.
Salt generously 24 hours ahead if possible (dry brine). Vacuum seal or use the water displacement method with a zip-lock bag. Add aromatics if desired — a sprig of thyme, a smashed garlic clove.
129–130°F for medium-rare. 1–2 hours for 1" steaks, 2–4 hours for thick cuts. Use a rack to keep the bag submerged and away from the circulator head.
Remove from bag, dry completely with paper towels. For best results, rest uncovered on a rack in the fridge for 30–60 minutes. This dries the surface fully and lets the outer layer firm up.
Cast iron or carbon steel, screaming hot. A thin layer of high smoke-point oil (avocado, refined coconut). 45–60 seconds per side maximum. Baste with butter in the last 30 seconds. Rest 5 minutes before cutting.
