How iron gets into your food

Short answer: Acidic foods and moisture react with bare cast iron and leach elemental iron into the food. A 1965 JADA study found tomato sauce cooked in cast iron went from 3mg to 87.5mg of iron per 100g — a 29× increase.

The mechanism is straightforward: mildly acidic foods react with the iron surface during cooking. Three factors drive how much transfers — acidity (tomatoes, wine, citrus transfer most), cook time (longer contact = more iron), and pan condition (a newer, less-seasoned pan transfers more because seasoning acts as a partial barrier). That last point is counterintuitive: the pan you're still building up is doing the most nutritional work.

The honest caveat: The iron transferred is non-heme iron, which has lower bioavailability than heme iron from meat. Eating vitamin C-rich foods in the same meal (tomatoes, peppers, citrus) significantly improves absorption. People with hemochromatosis should consult a doctor before cooking exclusively in cast iron.

Why most cast iron pans get abandoned
